Fried coconut Panko bananas

  • Prepare three deep dishes. Pour the flour into the first dish. In the second dish, beat the eggs. Mix the coconut, Haiku Panko and lemon zest in the third dish. 

  • Peel and cut each banana into three pieces. Flour the pieces of banana and shake off the excess. Next, dip the pieces of banana into the egg mixture then coat with the Panko mixture.

  • In a large pan or a fryer, heat the oil on medium until it reaches 180 °C (350 °F).

    If using a pan, keep close watch so the oil doesn’t overheat and burst into flames.

    Fry half of the banana pieces for 1 to 2 minutes, just until they are golden brown, turning them frequently. Drain on a paper towel. 

  • Repeat with the remaining pieces of banana. Serve with vanilla ice cream (optional).
