Cook Haiku rice vermicelli as per instructions, but only for 2 minutes.
Drain and set aside.
In a wok, or a large skillet, heat 1 tbsp of oil on medium heat. Add the beaten egg while whisking gently and cook for about 20 seconds until lightly cooked.
Remove from wok and set aside.
Heat the rest of the oil and stir-fry the meat (do not overcook).
Add the Haiku rice vermicelli, stir-fry sauce, cooked egg and green onions.
Stir-fry for 3 to 4 minutes to heat thoroughly.
Before serving, add in bean sprouts and chopped peanuts.
Mix well and serve with your choice of garnish.
The meat can be replaced by shrimps, shelled and deveined, or with tofu for a vegetarian dish.
