Asian rolls on lettuce leaves

Preparation

  • Cook the Haiku rice vermicelli according to package directions. Drain.

  • In a large skillet, heat a little olive oil over medium heat. Brown the cubes of tofu for 4 to 5 minutes on all sides.

  • Add the Haiku mixed Asian vegetables and stir. Cook for 1 to 2 minutes.

  • Transfer the vegetables and tofu preparation in a bowl. Add the rice vermicelli, dressing, and if desired, green onions. Stir.

  • Spread the mixture in the centre of the lettuce leaves. Fold the sides of the leaf over the filling, and roll tightly.

  • To prepare the sesame dip, mix all the ingredients of the dip in a bowl. Add salt and pepper to taste.
